Mini Salted Caramel Pear Pies

On the first day of Christmas, my true love sent to me…

This recipe is a slight alteration on Rosie’s Salted Caramel Apple Pies. As I’m not too fond of apples, I changed the ingredients ever so slightly. It’s a dead-easy recipe and the result is delicious and perfect for cold winter nights, maybe with a cup of hot cider or a nice hot chocolate?

For about 4-6 pies, you’ll need:

1 sheet of ready-made puff pastry

2-3 pears

A few teaspoons of salted caramel

Half a lemon

A tablespoon of cinnamon

A tablespoon of sugar

1 egg or a little bit of milk

Equipment: A glass, a brush, a baking tray, baking parchment

Time: Prep 15-20 mins. | Bake 15-20 mins. | Total 30-40 mins.

 

Pre-heat your oven to 220 degrees Celsius (425 Fahrenheit).

Unroll your pastry on a work surface and, using your glass, cut out an even number of round shapes.

Peel your pears, cut them into cubes and drizzle a little bit of lemon juice before coating them in cinnamon and sugar.

Line a baking tray with parchment and put half of the pastry circles on.

Pop a little bit of your cinnamon-sugar-pears into the centre (don’t pile too high!), drizzle in salted caramel and cover with a second pastry circle.

Give them an egg wash or brush with a little bit of milk.

Using a fork, close the edges and poke a few holes or slits in the top. This will let the hot air out during the baking process.

Bake your mini pies for about 15 minutes or until golden-brown.

Let them cool for a little bit whilst preparing your drink of choice.
